Brined & grilled red prawns, black garlic burnt butter, chilli, lime
500g Prawns, peeled, split and grilled
20g melted butter
Mint leaves
Lime wedges
Black garlic butter
125g Butter
30g Black Garlic
4 limes
25 Coriander
For the brine
4 limes. juiced
100g Salt
100g Sugar
2ltr water
Method
Brine the Prawns:
Mix lime juice, salt, sugar, and water. Brine prawns for 30–60 minutes, then pat dry.
Make Garlic Butter:
Blend butter, black garlic, lime zest, and chopped coriander until smooth.
Grill the Prawns:
Brush with melted butter and grill for 2–3 minutes per side until cooked.
Serve:
Top with black garlic butter, garnish with mint leaves, and serve with lime wedges.
